 2 cups steamed pumpkin
 1 cup steamed sweet potato
 2 organic eggs
 ½ cup coconut flour
 sea salt

Steam pumpkin and sweet potato

In a blender, place cooled pumpkin + sweet potato

Add eggs, coconut flour, salt & lemon, and blend

Leave to sit for 5 minutes, this will help the coconut flour harden

Heat a fry pan on a medium heat

Place tablespoon sized amount onto the pan, bigger sizes will crumble when you try to flip

Cook for 2 minutes on each side, or until cooked through

These pancakes can be a little fragile when flipping. Once one side is cooked, push down with the spatula to help them stick. If they continue to crumble, add a little more coconut flour to the mixture.

Can freeze for up to 1 month
