Pumpkin & Sweet potato fritters

 1 ½ cups pumpkin grated
 ½ cup sweet potato grated
 1 cup brown rice flour
 ½ onion
 1 handful corinander
 1 squeeze lemon
 1 pinch salt and pepper

Combine grated sweet potato, pumpkin, onion and coriander in a bowl

Add flour, salt and pepper and massage together with your hands, squeezing out any excess fluid.

Make into small sized fritters with your hands. The mixture will be quiet wet still

On a medium heat, add enough coconut or olive oil to slightly cover the pan

Cook on each side for 6 minutes or until golden brown

Can be frozen for up to 1 month
