
Banana Blueberry Breakfast Loaf

2 Medium Bananas
2 cups Blanched almond meal
1 cup blueberries (fresh or frozen)
2 eggs
½ cup sunflower seeds
¼ cup maple syrup
3 tbsp coconut oil
1 tsp baking powder

Preheat oven to 180 degrees and line or spray a loaf pan/brownie pan with parchment paper

Place wet ingredients in a medium mixing bowl and mix well or blend into a food processor

Once mixed well, add dry ingredients, and continue to blend

Fold in blueberries & sunflower seeds

Bake in oven for 45 minutes at 160 degrees, or until brown
