Paleo Apple & Blueberry Muffins

 2 ½ cups Almond Meal
 ½ cup tapioca flour
 1 tbsp Baking Powder (I use Bob Mills GF baking powder)
 ½ cup Honey
 ¼ cup Melted coconut oil
 ½ tsp Vanilla powder
 ½ tsp nutmeg
 1 tsp ginger powder
 1 tsp cinnamon powder
 ¼ tsp Himalyan salt
 3 organic eggs
 ½ cup Nut milk of your choice
 1 cup Frozen Blueberries
 2 Red or green apples, grated (skin on)
To serve - Whipped icing
 1 cup Coconut oil
 ½ cup honey
 ¼ cup shredded coconut

- Pre heat oven to 180 degrees
- Lightly grease muffin tray with coconut oil - makes 12 muffins

Combine your dry ingredients
- almond meal
- tapioca flour
- baking soda
- salt + spices
Mix well

Combing the wet ingredients
- Using an electric mixer on a medium speed, Beat the honey + coconut together until well creamed (this will take about 5 minutes)
- Add the eggs and beat for another 2 minutes
- Add your vanilla and beat for 1 more minute
- Adding the flour and dry ingredients and continue to combine
- Now slowly pour the nutmilk through and mix well

Turn off the mixer
- Slowly mix your grated apple and pear through the mixture with a spoon

- Evenly divide the batter among the muffin tray and bake @180 degrees for 20-25 minutes, until the tops start to brown.
- Allow them to cook, and then move to a wire rack
- Once cooled, drizzle honey

Whipped Icing
- add all ingredients to an electric mixer
- mix for 5 minutes
- Wait until muffins are completely cooled
- Transfer to fridge for storage

Keeps in the fridge in an airtight container for 5 days
