Lemon & Coconut Muffins

 2 cups blanched almond meal
 ½ cup tapioca flour
 ½ cup coconut sugar
 2 eggs
 ½ cup coconut milk
 ½ cup shredded coconut
 3 tbsp olive oil
 2 tsp vanilla
 1 tsp baking soda
 1 pinch sea salt

Preheat your oven to 180 degrees

In one bowl, Mix all dry ingredients

In a separate bowl, whisk the eggs, milk, oil, vanilla, and mix through the lemon and rind

Combine the dry and wet ingredients, and mix well

Add a little oil to a muffin tray, and fill 12 muffins

Bake @ 180 degree's, for 16-18 minutes, or until golden brown
