Blueberry & Banana Breakfast Muffins

Super simple + highly nutritious muffins for you + your family.

I have made these so that they are nutritionally balanced, and by having protein plus healthy fats in them, they will fill your little one's bellies, and work as a quick breakfast on the run, or a nutritious snack to have handy in the house or to fill a lunch box.

 3 Large over ripe Bananas
 4 organic eggs (or use egg replacements to make a vegan version)
 2 cups Almond Meal
  cup Coconut Flour
 3 tbsp Melted Coconut Oil
 6 Medjool dates (soaked for 1 hour to soften)
 1 tsp GF Baking Powder
 1 tsp Cinnamon
 1 tsp Organic Vanilla extract
 Small sprinkle of seasalt

- Preheat the oven to 180 degrees

- Add the Banana's, melted coconut oil, eggs (or replacement), Vanilla & cinnamon, dates & salt to a high speed food processor & blend until smooth
- Next add the dry ingredients (almond meal, coconut flour & baking soda) to the mixture and blend through
- Leave for 2 minutes, the coconut flour will absorb some moisture & this keeps it from drying out the muffin
- mix through the blueberries with a spoon (don't blend)

- Add to a lined or greased muffin tray
- Bake @180 for 15 minuets, turn the try and bake for an additional 5 minuets or until browned

Variables
- Decreased the dates if you are wanting a less sweet muffin
- OR, add a few more or some honey if you are wanting a healthier treat
- Chia or flaxseed eggs work instead of eggs
- Use this same formula (2 cups almond meal/ 1/3 coconut flour/ 3 tbs coconut oil) for different flavours eg - banana & apple, blueberry & pear etc
